GYPSY TOAST

1 egg per person
1 s1ice of bread per person
Beef dripping
Worcester sauce (optional)
Salt and pepper

Beat together the eggs and add salt, pepper and Worcester sauce to taste. Pour into a wide dish.

Soak each sice of bread in the egg mixture before cooking in a frying pan with melted dripping.

Cook for only one minute each side on medium heat.

PORK IN CREAM SAUCE

l½ lbs Pork fillet
2ozs Margarine
4ozs Mushrooms
1 Large onion
2 Cloves of garlic
½ pint of dry white wine or cider
2 x 3ozs packets of Philadelphia cream cheese
Seasoning

Slice the meat thinly and sauté in margarine, remove to casserole dish. Chop the onion and garlic and fry gently till soft, add mushrooms, add to meat and add white wine or cider and seasoning. Simmer on top of stove for 10 minutes.

Cream the Philadelphia cheese with a litttle of the 1iquor and add to the mixture. Stir well and put in a low oven for 20 minutes.

Serve with chopped parsley to garnish .
